The Best Blueberry Muffins

Blueberry muffins bring me back to my summers when I was a kid. My dad was a carny. He owned a concessions stand selling soda and cigarettes (he used to stand me up on his booth when I was little and yell out “cold soda, cigarettes!” to lure the crowds in. A+ parenting haha). I would travel with him to each of the fairs he worked in New England and stay with him for the whole week while my mom worked. Every morning, we would go and get blueberry muffins at our friend’s stand and eat them before setting up for the day. He would ask for them to be heated up and we would put butter on them and eat them with a side of coffee (hot chocolate for me, of course). I had the best summers at the fair.. going on ride after ride, collecting change under the Zipper that fell out of riders’ pockets, visiting my “fair family” every morning.. My father sadly passed away when I was just 12 years old, but thankfully I still remember these moments like they happened yesterday.

Fast forward to now.. we are always on the lookout for new recipes to try around here, and I was on a mission to find a great recipe for blueberry muffins. When I found this recipe months ago, I knew I had to give them a try and they did not disappoint! The streusel topping seriously hits the ball out of the park and the greek yogurt adds amazing texture.

BlueberryMuffins

Muffins:
2 cups of all-purpose flour
1/2 tsp. of salt
3 tsp. of baking powder
1 cup of plain greek yogurt
1/2 cup of vegetable oil
1 tsp of vanilla
2 large eggs
1 cup of sugar
2 cups of blueberries (we used fresh but you could also thaw frozen ones if that’s what you have)
Topping:
1 cup of flour
2/3 cup of sugar
1 stick of salted butter (softened)
 Instructions:
1. Preheat your oven to 400º & line muffin pan with liners
2. In a large bowl, mix together flour, baking powder and salt.
3. In a separate bowl, whisk together the eggs & sugar. Add greek yogurt, oil & vanilla.
4. Add wet ingredients to dry ingredients & mix well.
 5. Gently fold blueberries into mixture & put aside.
6. For streusel topping, combine your flour, sugar & melted butter, stirring with a fork until combined
7. Divide muffin mix into paper liners
8. Sprinkle streusel topping evenly on top of each muffin until it is all used (my girls loved doing this part!)
9. Bake for 15-17 minutes (approx.) or until golden brown.
10. Cool and enjoy!
I love to go back 20 years to sitting in the back of my dad’s van under his flannel blanket eating blueberry muffins.  I hope that you and your family enjoy these muffins!
